Grilled liempo binagoongan with pickled kangkong

I EXPECT a lot of our guests at Pahanocoy Eco Adventure Park to have an adventurous palate. We may not carry exotic ingredients but I do make it a point to introduce new twists to familiar dishes.

I introduced my Grilled Liempo Binagoongan with Pickled Kangkong recently and received rave reviews. You should give it a try, too!



600 g pork liempo
1-1/2 tbsp shrimp paste
2 tbsp vinegar
2 tbsp minced garlic
1 small chili, finely chopped
1/4 tsp pepper
1 tbsp extra virgin olive oil
1 tbsp gata


1. Marinate liempo in a bowl with the other ingredients for at least 4 hours.

2. Grill until well done.

3. Serve with pickled kangkong and rice.

To make pickled kangkong:
Combine 3/4 c. Vinegar, 1/2c brown sugar, 1/2 tsp salt, pinch of pepper, and 1/4 c. Chopped onion in a saucepan and cook over medium heat for 10 minutes, without stirring.

Put 3 c. Chopped kangkong in a bowl and pour the hot vinegar mixture over it. Let stand until cool.
